The Azienda Agricola Matteoli Company uses a hand-craft production process to obtain a genuine wine like that of long ago. The fermentation takes place in stainless steel vats; later the wine is aged for a year in small oak vats.
During this last period the wine acquires the particular tastes and smells that soften it to velvety smoothness, displaying the peculiarities typical of the area from which it comes. In the end, the wine rests some months in the bottle, where its taste becomes refined and it acquires body and robustness.
